Lo prometido es una deuda


I like Mediterranean cuisine.  Pasta I made yesterday was a variation of pasta I have eaten at  my Italian friend's house. 



Ingredients:
 200 dried penne;
1 or 2  tomatoes,
1 aubergine;
1 cup of tomato passata;
15 basil leaves;
2 teaspoon olive oil;
grated Grana Padano
salt,
some fresh herbs ( oregano, marjoram, coriander)
1 crushed garlic clove

Preparation:
1. Aubergine: cut off the cap and stem,  slice it in aprox. 1 cm slices, cut in half every slice,  then sprinkle with salt, let stand about 10 minutes, rinse. Place on the hot grill for aprox 20  minutes turning once.

2. Pasta: cook the pasta  according to the packet instruction until al dente, drain.


3. Sauce. Roughly chop tomatoes, heat the olive oil, add crushed garlic and tomatoes, fry for a while, add already grilled aubergine, add tomato passata, season lightly with salt.


4. Place the pasta on a plate, then top it with  generous amount the  sauce with tomatoes and aubergine, then sprinkle with herbs and Grano Padano, garnish with basil leaves.

Serve!
